Last week I went out of town for a few days. My last few days with the kids I was busy packing and getting our household prepared to run without me, so meals were light and easy - perfect for summer.
While I was preparing to head over to my local Safeway store, I noticed that they were having a pretty amazing sale going on. Many of the items on sale were everyday dairy products and they were some of our favorites. For June Dairy Savings, if you purchase $15 or more in participating products, you will receive a coupon for $5 off your next shopping trip. This is a great way to stock up on some great dairy products to create some fabulous summer meals and recipes with!
Since I live in a small town, Safeway is only one of two stores that are open 24 hours, and often I find myself shopping late at night when the kids are sleeping in order to get everything done! Needless to say, it's where I do a majority of my grocery shopping and utilize my club card with all of my personalized deals too.

My amazing husband he wanted a grilled cheese tuna sandwich. I came up with something that was similar to a tuna melt, in a grilled cheese sandwich form on sourdough bread. I had a round sourdough loaf just waiting to be used. I also had some delicious Cajun style mini andouilles (mini smoked chicken sausage), so I decided to also get something from the sale to compliment that and make little pics in a blanket, served with my favorite summer drinks - SMOOTHIES! This is a complete kid-friendly meal, so of course they were happy! Happy family = happy Mama. We finished it all off with some delicious ice cream, of course!
Grilled Tuna Sandwich Ingredients:
- 2 cans tuna
- 1-1/2 tablespoon mayonnaise (I use light mayo)
- 1 teaspoon brown mustard
- 1 tablespoon green onions, chopped
- 1/2 teaspoon red onion, chopped
- garlic salt, to taste
- lemon pepper, to taste
- hot sauce, to taste
- lemon juice, to taste
- one sourdough loaf
- 2-3 tomatoes, sliced
- 1-2 cups chopped iceberg lettuce
- Kraft Singles Cheese Slices
- 1 tablespoon butter or margarine, per sandwich
Pigs in a Blanket Ingredients:
- 1 can Pillsbury Crescent Rolls
- 1 package Mini Cajun Style Andouille
- a few pinches of shredded cheese
- sprinkle Parmesan cheese
Peach-Mango Smoothie Ingredients:
- 1 banana
- 1/2 cup orange juice
- 1/4 cup Blue Diamon Almond Breeze Milk
- 1 single serving Dannon Activia Peach flavored yogurt
- 1 cup frozen peaches
- 1 mango, skin removed and pitted
- 1/4 cup shredded coconut
- 1/2 cup diced pineapple
Directions:
Combine the tuna, mayo, mustard, green and red onion, seasonings and lemon juice. Mix until combined.
Slice up the loaf of sourdough and spread a layer of tuna on one side, topping with lettuce, tomatoes and then the sliced cheese. Place the second slice of bread on top.
In a frying pan, melt 1/2 tablespoon of butter over medium heat, then add the sandwich. "Grill" for a few minutes until toasted and golden, switch to other side, adding the other 1/2 tablespoon, then remove from heat once golden.
The sandwiches are big, so they can be cut in half. Look at the yummy melted cheese!
Preheat the oven to 350 degrees. Spread out each crescent roll and cut in thirds as triangles. Place the sausage on the wider piece and sprinkle some cheese. Roll the wider end towards the pointed end until shaped as shown. Place on baking sheet seam side down.
Sprinkle the tops with Parmesan cheese. Bake in preheated oven for 10-12 minutes. until golden.
While the crescents are baking, make the smoothie. Add all ingredients to the blender and mix until blended.
These were so good!
The sandwiches were so filling, half a sandwich was a full serving per person.
Fun summer meal, for lunch or dinner!
The smoothies were perfect with the rest of the meal.
The Klondike bars were the perfect finish to a satisfying meal.

ReplyDeleteAH! Those Klondike bars get me every time. I love the idea of a tuna melt, when I'm cooking sandwiches I always forget about those until my husband says "Oh, a Tuna melt would have been good!"
