Pink Lemonade Sprinkled Donuts

A few months ago I posted a great seasonal recipe for donuts on my column over at Work It, Mom. They were made with a yellow boxed cake mix and melted caramel apple cake frosting. Instead of following the instructions on the packaging, I made a few small changes that resulted in light and airy donuts that are both tasty and delicious. Rather than frying dough, these are baked and you can customize with whatever flavors you want!

After the holidays I did it again, but this time with a Pink Lemonade boxed mix I'd picked up a while ago. Instead of using cake frosting, I decided to use the same icing that I use on my super popular 7-Up cake, minus the lemon extract.
The ingredients are a tad different from the one I posted in my article, since it's a pink cake we use the egg whites rather than the whole egg to really bring out the pink color.

The results were so delicious! These donuts tasted like pink lemonade with a bit of vanilla icing and fun sprinkles. These would be great for a little Valentine's Day treat, or even to serve on Easter!

Ingredients:

  • 1 box Pillsbury Pink Lemonade Cake Mix
  • 1 1/4 cup milk
  • 1/3 cup butter or margarine, room temperature
  • 5 egg whites
  • 1 1/4 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Directions:

Preheat oven to 350 degrees.
Combine the cake mix, milk, butter and egg whites and mix as you would normally.
Spray your donut pan liberally with baking spray.

Fill each opening with 2 heaping tablespoons of batter, then spread evenly.
Bake for 19-23 minutes, using a toothpick to measure if it's done.

While donuts are baking combine the powdered sugar, milk, and vanilla extract.
Let donuts cool for a few minutes, then spread icing over each donut, following with sprinkles or toppings.

I used a few different sprinkles to make it fun.

These were delicious! So airy and light.

  3. I would never think to use 7-Up for icing and like that these are baked, not fried. You got my wheels turning. Wondering how I can adapt for my food-allergic son.
