Blackberry Dragon Fruit Smoothie

Dragon fruit is honestly one of the prettiest fruits out there. It's so unique with it's leafy and bright exterior and freckled insides, and I love the texture of the fruit. It's light and mild, with a texture similar to kiwi. I came across some this year and I just couldn't pass them up, and I decided to create a unique smoothie to incorporate their taste. One of the first things to cross my mind was blackberries. I just thought the contrast between the two fruits would be a unique blend, almost like opposites coming together. Adding a few other ingredients, the return is a mild and delicious treat!

Ingredients:

  • 1 cup dragon fruit
  • 1/2 cup blackberries
  • 1/2 small banana
  • 1/2 cup pineapple
  • 1/2 cup coconut milk
  • 1/2 cup peaches
Directions:

The most difficult part of this recipe would be peeling the dragon fruit. It's really not difficult, don't let the unique exterior fool you, just cut the fruit in half and scoop the meaty insides out. 

The skin is actually pretty thick and stays intact, so the insides just peel right out.

Throw everything in a blender, pulse until blended smooth. 

Serve with a small piece of dragon fruit and blackberry as garnish and a fun straw! Easy peasy!
