Easy Slow-Cooked Pork Roast

I've gone into my love for my slow-cooker a few times here, but this is one of my all time favorite "go to" recipes with my slow cooker. This is perfect for those days you have mouths to feed, but have a ton of things to do and can't slave in the kitchen for hours! Perfect for this time of year when family and friends are always visiting, people are last minute shopping or getting the last of the presents wrapped.

It seems there's never enough time around this point in the season, and this is a great way to get a delicious hearty meal in during all the hustle and bustle. Not to mention it's good enough to serve to guests! Some people participate in certain lucky foods to eat on New Year's Day to start your year off right. Pork is one of those foods, the pig signifies progress because it roots itself in the ground and pushes forward, many also believe because of the rich fat content it signifies wealth and prosperity.

Last New Year's my family and I decided to "try our luck" and eat all foods considered lucky. We aren't superstitious, but figured it couldn't hurt, and it turned out to be a really good year for us! So this is a new tradition we don't mind continuing, and this would be a perfect recipe to add to that. I'll share more recipe ideas with you in the coming days!

Ingredients:
  • 2.5 pound Boneless Pork Roast
  • garlic salt
  • ground pepper
  • dried oregano
  • dried basil
  • ground cumin
  • ginger powder
  • 1-2 tablespoons canola oil
  • 1 medium onion
  • 1 (8 ounce) can tomato sauce
  • 3/4 cup reduced sodium soy sauce
  • 1/2 cup brown sugar
  • 2 teaspoons mustard powder
Directions:
If you've been reading here long enough, you know I love my seasonings.
I really don't measure on this one, just shake those 6 seasonings onto the meat and rub.
You can also use a store bought rub in place of the seasonings. Totally up to you!
Once you're done seasoning your meat, heat up the oil in a pan on a fairly high heat setting. Once the oil is hot, sear the meat for a few minutes on each side to seal in the seasonings and flavorings.The meat will turn a bit white and it will smell pretty amazing. Try to get all sides in, but it doesn't have to be perfect.
Here's about how it will look, now drop it into your slow cooker!
Now slice up the onions and throw them on top of the roast and around it.
Mix up the tomato sauce, soy sauce, sugar, and mustard and pour it over. Cover and cook on low for about 8 hours (depending on your pot, mine is oval and large so it seems to cook a bit faster than others.)
You can turn it halfway through (this is before I flipped it.) I usually don't, but this time I did.
It's great either way, but once you open the pot it does take some time from the cooking time, so you may have to add 1-2 hours to the cooking time for each time you open your slow cooker!
And it's done! Look at how the onions caramelize! 
It's literally falling apart, it's so tender so you don't really even need a knife, but I was going for presentation here!
Serve with something easy, I made it with some steamed rice and some quick garlicky broccoli.
Great reward for such a low effort meal!
