I have to admit, breakfast is my favorite part of the day. It's one of the first things I knew how to cook, long before I could make a main course for dinner, breakfast was always my specialty.
I love making a variety of things. Breakfast burritos, breakfast sandwiches, omelettes, quiche, breakfast casserole, pancakes, waffles, crepes...you name it I make it!
I've even been known to make breakfast for dinner once in a while... ok, maybe pretty often.
Anything that includes bacon, avocado and eggs is a winning breakfast combo for me, and this one doesn't fall short of expectation. I threw this together the other morning and it was so good I kept talking about it until I made it again yesterday and took pics for you!

If you want it a little healthier than this version, you can use egg whites instead of a whole egg, and turkey bacon instead of regular. This would still be amazing with those changes!
Ingredients (per pita/person):
- One pita pocket
- one egg, scrambled with milk
- 2 slices tomato
- 1/4 avocado, sliced
- 2 pieces of thick cut bacon
- 2 tablespoons hummus
- 1 tablespoon Chunky salsa
- Tabasco sauce
- salt and pepper to taste
Directions:

Start by adding your bacon to the pan to cook. |

While the bacon is cooking break your eggs in another pan and add your milk. I don't measure my milk, but this is what it looks like with 6 eggs. I know most people break their eggs in a bowl and mix, but unless I'm adding eggs to an omelette or chorizo or something I just go ahead and mix in the pan. |

Beat your eggs with a whisk. The secret to fluffy eggs is the milk. If you want them nice and fluffy, not flat and runny - use milk! Lightly spray your pan so the egg doesn't stick. Don't use too much oil and make sure you use enough milk and you will have perfect, fluffy eggs every time! |

Once the bacon is done, put it on a plate over paper towels to grab any extra grease from the bacon. Mmmmmm, Bacon! |

Add your salt and pepper. |

Slice up your tomato and avocado. |
|
Now you're getting ready to build your delicious Breakfast Pita! This is my absolute favorite hummus, I try to think of new things to use it on all the time! Roasted Garlic is my favorite flavor, and the roasted red pepper is delicious too! |

Now get your pita pocket ready, I place mine in the microwave for about 20 seconds or so just to warm it up, that way it's a little more flexible once you start filling it. I love these pita pockets, I've tried a few different brands and flavors but these are my favorite. They are also some of the more healthy ones, lower calories if that matters to you. |

Now spread the hummus on both sides of your pita pocket. |

Then start filling with the tomatoes, then avocado. |
|
Then add your eggs.. |
|
Break up your bacon in little bite size pieces and throw that in there too.. |
|
Now add your salsa and Tabasco Sauce. Nothing beats Tabasco sauce when it comes to eggs. The flavors match right up together and compliment each other so well. |

Serve with some fruit on the side, and ENJOY!! |

DeleteYummy! I had something similar to this today! No pita or hummus, but all the other components, just on the Sara Lee Wheat Minis. Delicious. With a side of greek yogurt and fruit. We are so on the same page! I'm going to have to try it with some hummus.
