Chocolate Cream Pie with Chocolate Shortbread Crust and a GIVEAWAY!

Do any of you recall the lemon blueberry pie I made last month? I had made the crust of that pie with 2 different flavored boxes of Walkers Shortbread cookies and it was so delicious! I also shared with you my excitement of being selected as a blog ambassador for Walkers! Each month I receive a different shipment of goodies that I get to play with and develop a new recipe for and a new theme each month! This months theme is Easy Entertaining for the Dog Days of summer, so my shipment included four boxes of the adorable Scottie Dogs. Two were the Pure Butter Shortbread flavor, and two were their newest flavor, Pure Butter Shortbread Chocolate!

When I think of summer entertaining and desserts, chocolate always comes to mind. I mean, who doesn't like chocolate? So I decided to develop a delicious Chocolate Cream Pie recipe, crushing and mixing both types of cookies for the shortbread crust, topped with heaps of homemade whipped cream and decorated with more adorable Scottie Dogs! The chocolate pie filling is smooth and just the right amount of sweetness, it compliments the crust wonderfully and the only baking you do is just a few minutes for the crust! Perfect for busy summer gathering and a definite crowd pleaser. The recipe is below - right after the fun giveaway!

Chocolate Shortbread Crust Ingredients:
  • 1 box Pure Butter Shortbread Scottie Dogs
  • 1 box Pure Butter Shortbread Chocolate Scottie Dogs
  • 1 tablespoon granulated white sugar
  • 1/4 cup melted butter
Chocolate Cream Pie Filling Ingredients:
  • 3/4 cup white granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 cup heavy whipping cream
  • 1-1/2 cup whole milk
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter
  • 5 squares unsweetened baking chocolate, chopped (about 1-1/2 cups)
Whipped Cream Ingredients:
  • 2 cups heavy whipping cream
  • 1/3 cup confectioners sugar (powdered sugar)
  • 1 teaspoon vanilla extract
Garnish (optional):
  • 4 Pure Butter Shortbread Scottie Dogs
  • 4 Pure Butter Shortbread Chocolate Scottie Dogs
  • chocolate shavings
Directions:
Preheat your oven to 400 degrees.
As adorable as these little guys are, they have to get crushed! No worries, we will save the other boxes for garnish on the top of the pie!
Using either a mallet and plastic bag or a food processor until they're crushed into tiny crumbs.

Add the sugar and melted butter into the crumbs and mix well until all crumbs are wet.

Press into pie plate, evening out with the back of a spoon until smooth.
Bake in preheated oven for 5-6 minutes. Let cool and refrigerate while assembling the remainder of the pie.

Chop the semi-sweet chocolate into small pieces, place in large bowl and set aside.

In a large pot (with heat off) add cornstarch, sugar, and salt.
Add 1/4 cup heavy cream. 

Whisk until smooth. 

Add additional 1/4 cup heavy cream and whisk again.
Add egg yolks and whisk until mixed thoroughly.

Place pot over medium heat, then add the remaining heavy cream plus the whole milk.
Bring to a boil, whisking consistently. Let boil with bubbles for one minute (this is when it will begin to thicken). Remove from heat and add the vanilla extract and butter. Stir quickly until butter is melted.

Immediately pour in the bowl over the chopped chocolate. Stir until all chocolate has melted.
Immediately pour mixture through a sieve or mesh strainer to ensure chocolate filling is smooth. 
Chill until ready to assemble pie. 

Pour chocolate filling into crust and smooth. Chill.

While the pie is chilling, add all whipped cream ingredients in a mixing bowl, and beat on high until stiff peaks form. Spread whipped cream over the pie - there will be a lot!
Add the cookies to garnish - too adorable!!

Add chocolate shavings. Refrigerate until ready to serve.

This pie slices beautifully!

It's so pretty, and the little Scottie Dogs add a gorgeous touch!

Mmmm, just look at that crust! Enjoy!
