Sweet and Zesty Mango Salsa

Now, I'm finally well enough to get in the kitchen and cook for my family, although most of the time I have to make separate meals because I still can only have soft foods. (Wahhhhhhh!!)
I also have a few posts I'm working on developing recipes with some great companies. For one of these great recipes I came up with this mango salsa. In the Spring and Summer I love tacos and salads and wraps with lots of colorful fruits and vegetables, and nothing compliments that more than a homemade salsa. You might remember I made another fruity salsa not too long ago, but instead of strawberries, this one has mangoes. Yum!

I've seen a variety of recipes for mango salsa and just like everything else, everyone makes it just a little differently. For me though, I love the sweetness of the mango contrasting with the spiciness of a jalapeno and the lime and cilantro give it a little zing. I chose an orange bell pepper since it tends to be just a bit sweeter than red or green. This salsa is great with chips or crackers, but also great over fish or chicken, in a wrap, over a salad... the possibilities are endless!

Ingredients:

  • 1 ripe mango, skinned and diced
  • 1/2 medium red onion, chopped
  • 1 medium jalapeno, minced (seeds removed)
  • 1/4 large cucumber, peeled and chopped (seeds removed)
  • 1/3 medium orange bell pepper, chopped
  • 1/4 cup cilantro, roughly chopped
  • juice of 3 small limes (about 1/4 cup)
  • salt and pepper to taste
Directions:
Dice the mango and combine with the chopped onion and jalapeno.
Add in the cucumber being sure to remove all the seeds.
Mix in the bell pepper and cilantro.
Add the lime, salt and pepper and mix it all together until well combined.
Refrigerate until ready to serve. 
Enjoy!
